Even though it was a weeknight, I was still smarting from the Banana Cream failure, so I fired up a weeknight pie. Chocolate Chess Pie is another southern specialty. Those southerners sure like their pie and for some reason, I’m mighty attracted to southern pies. Chocolate Chess had another weeknight pie advantage. It has limited ingredients; sugar, eggs, butter, vanilla and semi-sweet chocolate. These are items I have on hand pretty much all the time, in addition to the ingredients for a flaky butter and shortening crust.

The girl beat the pants off me in Uno several times as I played a few hands while simultaneously baking the pie. Note to self: mult-tasking is no way to win at cards.

The Chocolate Chess Pie has a dense filling and would probably be even better with a dollop of vanilla ice cream. It’s a very sweet pie and not a family favorite, but it was no Banana Cream Soup, either.

    This is one of my favs too! What is wrong with your family? But, I have to agree, that a warm piece with ice cream is heaven on a plate!

    Ever made a toll-house pie? It is the only pie I have ever made from scratch, so easy, and so yummy.
